For the crust of Vegan Fruity Pies:
- 2 ½ cups vegan all-purpose flour
- 1 cup vegan butter (cold and cut into small cubes)

- In a mixing bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss until the berries are coated with the sugar and cornstarch mixture.
Assembling the pies:
- Your preheated oven which is on 375°F (190°C) and line a cooking sheet or baking sheet with butter paper.
- On a lightly floured surface, roll out one of the chilled dough disks to about 1/8inch thickness.
- Use a circular cutter or the rim of a glass to cut out 5 to 6-inch circles from the dough.
- Place a spoonful of the fruit filling onto one half of each circle, leaving a small border around the edges.
- Fold the other half of the dough circle over the filling, creating a half-moon shape. Finish the pies by pressing the edges together with a fork.
- Assemble with the rest of the dough and filling.
- Place the assembled pies on the prepared baking sheet and make a small slit on the top of each pie to allow steam to escape during baking.
- Bake the pies in the preheated oven for about 20-25 minutes or until the crust is golden brown and the filling is bubbly.
- Remove the pies from the oven and let them cool slightly before serving.
