These Vegan Fruity Pies are bursting with sweet and tangy flavors, making them a delightful treat for any time of the day.

For the crust of Vegan Fruity Pies:

   Instructions:

  • Mixed all these four ingredient (the flour, vegan butter, granulated sugar, and salt) 
  • Mix the ingredients until it looks like coarse crumbs.
  • While running the food processor, gradually add ice-cold water, one tablespoon at a time. When the dough begins to come together, stop adding water.
  • Make use of clean surface and shape your dough into smooth ball.
  • Divide the dough in half, shape each half into a disk, wrap them in plastic wrap, and refrigerate for at least 30 minutes.

For the filling Vegan Fruity Pies:

   Ingredients:

  • 2 cups fresh or frozen mixed berries (such as strawberries, blueberries, raspberries)
  • 1/4 cup granulated sugar (adjust to taste, depending on the sweetness of the berries)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 tablespoon vanilla extract

Instructions:

  • In a mixing bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss until the berries are coated with the sugar and cornstarch mixture.

   Assembling the pies:

  • Your preheated oven which is on 375°F (190°C) and line a cooking sheet or baking sheet with butter paper.
  • On a lightly floured surface, roll out one of the chilled dough disks to about 1/8inch thickness.
  • Use a circular cutter or the rim of a glass to cut out 5 to 6-inch circles from the dough.
  • Place a spoonful of the fruit filling onto one half of each circle, leaving a small border around the edges.
  • Fold the other half of the dough circle over the filling, creating a half-moon shape. Finish the pies by pressing the edges together with a fork.
  • Assemble with the rest of the dough and filling.
  • Place the assembled pies on the prepared baking sheet and make a small slit on the top of each pie to allow steam to escape during baking.
  • Bake the pies in the preheated oven for about 20-25 minutes or until the crust is golden brown and the filling is bubbly.
  • Remove the pies from the oven and let them cool slightly before serving.
